Journey fields can be changed when editing a Journey. This article is related to changing the data for the field, if you just want to change the label please see the page for editing field labels in a Journey.
Place your mouse cursor over the Journey field that you'd like to edit and then click on the pencil icon.
So long as it's a Journey field type you will then see an option to use the separate data field editor to change the field.
You will then be able to change the field name. Certain field types such as selection fields will also allow you to change the options.
